Yesterday when I get to visit my childhood friend Shaina, who have been long living in some parts of South East Asian nation, I was pretty amazed to know how different country prepared certain ingredients or food for that matter, on their table.

One thing that I noticed is how avocado is being served to some Asian countries compared to us here in the US. My friend prepared an avocado shake which I find very new to me but is being loved and served most of the time on the place where she lives.
It really amazes me and definitely encourages me to visit and explore other countries in other parts of the world real soon.
Today, I will be sharing with you this healthy avocado chickpea salad with chili lime dressing. Hope you will like it! 🙂
2 tablespoons olive oil
¼ cup lime juice
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon pepper
¼ cup cilantro, chopped
2 cans chickpeas, drained and rinsed
1 cucumber, chopped and quartered
20 cherry tomatoes, halved
1 onion, chopped
1 avocado, diced
⅓ cup carrots, shredded
1. Combine dressing ingredients in a small bowl. Whisk together until mixed thoroughly.
1. In a large bowl, combine chickpeas, cucumber, tomatoes, onion, avocado, carrots, and dressing.
2. Toss together until evenly combined.
